Sweet Sunshine Granita

Ingredients

  • 1 can LaCroix Sunshine
  • 3 tbsp lemon juice
  • 1/2 cup fresh orange juice
  • 1/2 cup coconut water
  • 2 tbsp honey (mixed with 2 tbsp hot water)
  • 4 large lemons, optional for serving
  • Mint, for garnish
  • Edible flowers for garnish

Directions


Add LaCroix Sunshine, lemon juice, orange juice, coconut water and diluted honey to a shallow container or baking dish. Stir to combine.


Cover and freeze. Every 30 minutes to 1 hour, use a fork to stir and break apart frozen parts. Continue until the mixture is frozen and no longer wet, approximately 4 hours.


For lemon cups: Cut off the top of the lemons and remove a thin slice from the bottom, so they sit flat. Use a paring knife to cut around the fruit and use a spoon to scoop out the flesh.


Fill cups with the granita mixture. If desired, garnish with mint and edible flowers. Enjoy immediately.
