LaCroix Peachy Keen Punch
- 4 cans Peach-Pear LaCroix
- 1/4 cup honey
- 2 tbs. grated fresh ginger root
- 1 cup water
- 2 very ripe peaches, halved, pitted, and thinly sliced
- 16 fresh mint leaves, for garnish
Over medium-low heat, simmer ginger, honey and water together for five minutes. Remove from heat and let cool. Strain, cover, and refrigerate until well chilled. Distribute peach slices among 8 tall glasses and lightly press with a spoon to release their juice. Pour about 2 tbs. of chilled mixture over peaches. Add ice and top with LaCroix. Stir well and garnish with 2 mint leaves.
