We all like to indulge a little during the holidays. As long as you are eating well on a regular basis, it’s ok to have a piece of cake or that extra scoop of spinach dip. If you’re going to a party make sure to eat a healthy snack before leaving your house so you are not ravenous when you arrive. A salad or broth- based soup fills you up without adding extra calories and it will allow you to eat more sensibly once you get to the party. If you’re going to a potluck, bring a healthy dish to ensure there is something you can enjoy quilt free. One of my favorite recipes is black bean and corn salad because it’s nutritious, filling, and easy to make.

  • 1 can black beans (14 ounces), rinsed and drained
  • 1 can corn kernels, rinsed and drained
  • 1 small red bell pepper, seeded and chopped
  • 1 medium tomato, chopped
  • 3 scallions, chopped
  • ¼ cup cilantro, chopped
  • 2 teaspoons hot sauce, such as Tabasco
  • 1 lime, juiced
  • 1 Tablespoon olive oil
  • Salt and pepper to taste

Mix all together and allow to chill for at least 30 minutes. Serve chilled or room temperature.
