LaCroix Peachy Keen Punch

Ingredients

  • 4 cans Peach-Pear LaCroix
  • 1/4 cup honey
  • 2 tbs. grated fresh ginger root
  • 1 cup water
  • 2 very ripe peaches, halved, pitted, and thinly sliced
  • 16 fresh mint leaves, for garnish

Instructions

Over medium-low heat, simmer ginger, honey and water together for five minutes. Remove from heat and let cool. Strain, cover, and refrigerate until well chilled. Distribute peach slices among 8 tall glasses and lightly press with a spoon to release their juice. Pour about 2 tbs. of chilled mixture over peaches. Add ice and top with LaCroix. Stir well and garnish with 2 mint leaves.
